Sausage Stuffing

Ingredients

  • 3 qts of slightly stale chewy bread torn into
    1inch pieces
  • 2 cups of diced onions or leeks
  • 1⁄4 cup + 2 tablespoons of melted duck fat,
    butter or olive oil
  • 1lb Sage and Onion Sausage, Fennel or
    other mild sausage.
  • 1 qt turkey, duck or chicken broth
  • Salt and Pepper to taste
  • Optional: 3 cups of roasted diced pumpkin,
    sautéed wild mushrooms or apples, 2 cups
    grated parmesan, chopped sage, savory,
    thyme or whatever else takes your fancy.

Instructions

  1. In a saute pan over medium heat, sweat the onions or leeks in 2 tablespoons of
    duck fat, butter or olive oil. Cook until tender, season with salt.
  2. In a large bowl mix the bread, cooked onions or leeks, and remaining melted
    duck fat well.
  3. Break the sausage into walnut size blobs and add 1 cup of the broth along with
    any other optional ingredients. Mix gently.
  4. Place the mixture into a baking dish just barely deep enough to accommodate
    your stuffing, pour the remaining broth over the stuffing (top with a little grated
    parmesan, should your heart desire) and loosely cover with foil.
  5. Bake in a pre-heated 325 degree oven for 1 1⁄2 to 2 hours. Remove the foil and
    allow to brown for another 30-40 minutes.
